CYGNUS: Cherry (Blend B) is a blend of three years of traditional, Lambic-inspired, coolship, spontaneous ale that follows the Méthode Traditionnelle guidelines. The blended base beer was refermented with two different kinds of whole tart cherries, Montmorency and Balaton, including the cherry pits which adds to the classic complexity and flavor associated with Kriek. After several months of aging the beer on cherries in oak barrels, the beer was removed and stored. More base beer was added to the cherries, extracting more color and a milder nuanced flavor. Three blends were created, each with their own unique character and final fruit level.

Bottle at MBCC Green Session. Pours a hazy orange ruby with small off white head. The aroma is strong oak, funk, cherry skins. Medium body, sweet cherry, lemon, wood, light funk, very good.

Draft. A red beer with a thin white head. The aroma has notes of cherries, funk, brett, wood, and malt. The flavor is sour with notes of cherries, funk, brett, wood, and malt, leading to a tart finish.

Bottle, taster. @Mash Beer Fest 2019, Barcelona (Spain). 26/10/2019. Deep pink colour with almost no head. Aroma is frozen cherry, funk and tart. Taste is also tart and cherry leading to a medium sour finish. Next one please!

Bottle with thanks! Pours a bit cloudy pale raspberry red, large kinda fizzy white-pink head, dissipates fairly quickly, decent lacing. Aroma is funky, woody, Brett, bugs, barnyard, horse blanket, dank musty fruit. Flavor is dry, musty, funky, fruity, mineral water.

Bottle 375ml. @ MBCC'18 [ Green Session ]. - Mikkeller Beer Celebration Copenhagen 2018, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark.[ As Black Project Cygnus: Cherry (Blend B) ].Hazy - murky medium red colour with a small to average, fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, fruity yeast, cherry, almonds, funky, cherry stone. Flavor is moderate sweet and light acidic with a long duration, funky, tart, cherry, almonds, lemon, brett, cherry stone. Body is medium, texture is oily to watery, carbonation is soft. Tap@MBCC 2018 Green Session, Copenhagen - red pour with a white pinkish head. Sour fruity with prominent notes of cherry, some cherry stone, cherry skin, light berry undercurrent, medium body, lingering tart cherry fruity finish.

MBCC 2018. Green. 'Free sauna with your ticket'. Keg. Hazy cherry red beer, small pale pink head. Light dry palate, reasonable fine carbonation. Generic red berry fruits, trace of candy fruits. It's fine but there are too many similar beers at this festival.

Blend B bottle picked up during CBC in Nashville. Pours a clearish ruby color with a finger of pink foam that lingers. Lovely cherry forward nose with some oak and light prosciutto aromas as it warms. Spritzy carbonation with more cherry skin and flesh notes and some light mineral on the finsh.
