CYGNUS: Cherry (Blend B) is a blend of three years of traditional, Lambic-inspired, coolship, spontaneous ale that follows the Méthode Traditionnelle guidelines. The blended base beer was refermented with two different kinds of whole tart cherries, Montmorency and Balaton, including the cherry pits which adds to the classic complexity and flavor associated with Kriek. After several months of aging the beer on cherries in oak barrels, the beer was removed and stored. More base beer was added to the cherries, extracting more color and a milder nuanced flavor. Three blends were created, each with their own unique character and final fruit level.

Bottle at MBCC 2018 Green (session IV), 11/05/18. Cherry red with a decent crimson cap. Nose is funky, wood must, damp straw, cherry skins. Taste comprises damp wood, farmyard, cherry stones, light fruit balsams, berry pips, damp hay. Medium bodied, fine carbonation, drying close with a balanced puckering effect. Decent sour.

Bottle at mikkeller 2018 Green... deep red... Thin tan lacing... Soft sweet cherry stones.. Dry fruits nose.. big almond.. soft cherry funk fruit

Bottle @MBCC2018, Green Session. Cloudy red, offwhite head. Sour cherry aroma. Funky, malty, sourish berries, acidic flavour.
