West Coast Pilsner

Sing Swan Song is our West Coast pilsner brewed with a simple two grain blend of German pale pilsner malt and flaked wheat. We hopped Sing Swan Song with Comet, Mosaic and Strata in the kettle, then dry hopped it with more Mosaic and Strata. This West Coast pilsner was fermented with our house lager strain and spunded for natural carbonation.

Aromas are onion, lemon and malt. Flavors are similar to nose. Fairly dry and a bit medicinal upfront with good body and okay carbonation. Slightly bittersweet in the finish.

Oh damn....that's...that's just sublime. HUGE mineral with just an ever-so-slight touch of sulfur mixing with funky, berry and spice from the hop. Man, Comet is such a fantastic hop; it's crazy it's not used more widely. There's an afterthought of pineapple essence, perhaps from the Strata, but it looks like they took it easy on that. Just mineral for days with honey-laced cracker-like malts in support.
Lives up to the nose with a flawless blend of rich, honey-like malt that dries out on the finish with light cracker/biscuit. Crisp and well-bittered but not too much so, with mild spice, but no real herb, which is impressive. Yellow fruits and lingering mineral. Incredibly well-balanced at this point (looks like it was just a bit sharp when young) and, it seems to go without saying from Bizarre, an absolute ton of flavor for its size.

These guys really need to get together with Schilling....

16oz can from Tavour. Foggy golden pour, abundant, fluffy white head, clumps of lacing, fine carbonation. Grainy aroma with faint fruity notes. Taste is bready, biscuity, with a mellow hoppy bite, notes of lemon. Dry finish.

Can from Tavour. Pours clear bright gold with a large foamy white head. Aroma is very mixed. Aroma is pineapple/citrus/earth/pine. Med body. Flavor seems like the aroma, tho maybe the pineapple is passion fruit. Pretty dry. Hop has a definite bite. Pale malt support shows up after awhile. Seems a bit astringent. Quite nice.
