This is a blend of imperial stouts aged for 15 months in Basil Hayden Toast bourbon barrels and Laird's apple brandy barrels that was conditioned on maple syrup, caramel and a blend of Vietnamese Saigon and Sri Lankan Ceylon cinnamons.

While tasting through barrels with the fine folks at Rorschach, we loved the expressions from Bestowed in both apple brandy and Basil Hayden Toast barrels, but found that a blend brought the most complexity. For adjuncts, we wanted to lean into the "toast" and "apple" from the barrel types and went for a caramel apple French toast vibe with caramel, maple and cinnamon. It's a complex beer with balanced cinnamon notes, a kiss of sweetness from the maple and caramel along with a rich barrel character.

375mL bottle, pours black with a tiny brown head. Aroma is full of apple brandy barrels, plenty of cinnamon, some caramel, and dark sugars. Flavour is much the same, with apple brandy barrels, maybe a touch of bourbon, lots of cinnamon, and caramel. The body is surprisingly light, almost thin, but the flavour depth is fairly full-on. Not the most cohesive or pleasant mix of flavours, but this does work on some level.

Tasting at Ryan's, bottle
Black colour, no head. The aroma immediately offers some cinnamon; old library; and then wood, coconut, jam (all very mild). Full bodied; excellent chocolate flavour, with cookies, cinnamon, caramel, maple syrup, vanilla, then more cookies, and a good dose of alcohol in the finish. Wonderful.

375ml (thx, Chris S.!) @ Ryan's. Appearance: very dark brown with a weak dark beige head. Aroma: a lot of cinnamon, sweet, some American oak hiding behind tons of cinnamon. Taste: along the same lines, moderate body and sweetness. Overall: good for what it is, but it's just ok for me and I am not a big fan of so much cinnamon in the beer when you can barely find anything else than cinnamon itself.

Pours inky, dark. The aroma is expressive - cinnamon, maple and a nice bourbon note. This is giving quality vibes. On the palate, all of a sudden there's a burst of bright apple, cinnamon and maple. Sticky and sugary, balanced by bourbon, though it does finish a bit hot. This is quite good.

Poured from 375mL bottle. Very dark brown with no head. Lots of woody cinnamon bark, mild bourbon and apple brandy. Nice character, despite overly cinnamon character.
