To increase hop saturation without sacrificing a bright appearance or a crisp finish, we applied a new brewing technique to a West Coast recipe. Dry hopped with Simcoe, Strata, Mosaic, and Talus, this innovative beer offers unmistakable notes of citrus, strawberry, orchard fruit, and pine.

Slight haze, pale, thin head, moderate bitterness, some overripe fruit. Malts a touch sticky, as is usual at Reubens.

5oz pour at Ballard location. Pours clear blonde with white head. Aroma has bright pine, juicy berries, pale malts. Flavour has bright pine, berries, pale malts. Initial reaction was that it smelled/tasted too much like cleaner, but probably just association with the flavour profile than a negative quality of the beer. Quite good, nice and bright.

On tap at Reuben's - Ballard, pours a clear bright golden with a small white head. Aroma is full of fruity hops, light pine, and crisp bready malt. Flavour has piney hops, biscuity malt, and a touch of doughy notes. Bright, fresh and clean. Excellent.
