Aroma: nice cherries, some sweetness, bugs.
Taste: along the same lines, not much cherries in the taste and residual sugars.

Pale pink, some haze. Thin head. Medium tartness, pie cherry, not sure I’m getting the shiso leaf. The base saison has been getting tarter the last year or so, making theberrs a little less balanced.

4oz pour at brewery. Pours murky red with white head. Aroma has cherries with a good dry, rustic backbone. Flavour has tart cherries, rustic yeast, dry wood. Very solid.

On tap at Fair Isle, pours a cloudy bright red with a small white head. Aroma has dry deep cherries, wild yeast, and a touch of earthiness. Flavour is complex, with lots of minty notes, lightly tart cherries, and rustic saison yeast. Complex and cohesive. Really nice blend of cherries and shiso leaves with a killer saison yeast base.
