Aion is a predecessor for multiple releases and blends past, present, and future - and has evolved into an entity of its own. From this year's blend springs forth a tropical peach and white wine acidity, balanced by delicate oak character and slight tannin from grape must.

473mL can, pours a hazy golden with a medium white head. Aroma is full of fragrant wild yeast, a touch of wood, and gentle stone fruits. Flavour is fairly complex, with lots of wild yeast, stone fruit, and a touch of oak. Real nice barrel blend and wild yeast character. Excellent.

473mL can. Pours slightly murky gold with white head. Aroma has a lot of oak, musty grape skins, and some tart wild yeast. Flavour has grape must, lots of dry wood, some bugs. Not super complex, but still a really nice dry sour.

Aug 29, 2025 (7/3/7/3/15=3.5): Poured from 473mL can. Hazy yellow with small white head. Gushed a bit on opening. Mild oak and tart wild yeasts. Okay.
Aug 22, 2024 (7/3/8/4/15=3.7): Poured from the tap @ HoF. Clear-ish gold with small white head. Some nice oak and tart funk. Has some layers. On par with original Aion. Bartender says it has actual grape must, but if so, it’s quite subtle feint vinous notes.
