Pours a somewhat turbid straw from a bottle, I could see the bubbles pouring out of the bottle, had about 2/3 of the glass as head, some thick lacing. Aroma is slightly like vomit, combo of the yeast and funky brett? Flavor is a thin faint lemon pez, some funkiness and tartness, but also with a hit of sweetness. Thin, watery. Was hoping for something better.

Nicely unfiltered, bottle conditioned pour shows just a light bit of haze in the copper liquid with tons of white head showing strong retention.
Tons of dough, black pepper, star fruit, light lemon and tangerine show none of the brett. Seems like at three months it should have emerged, but it’s just all saison yeast, phenol and lightly citrusy hops. A slight alcoholic edge is the only thing that detracts. Biscuits, vanilla, tea, light honey.
In the mouth, a malty, but well-attenuated texture with tight carbonation immediately entices. Lemon and orange citrus notes join black and white pepper phenols with white bread, very light honey and plentiful floral notes. Again, there is a touch of alcohol sharpness, but otherwise, this is a fine, albeit somewhat messy rendition of a classic saison. Not in love with the hop profile, though they aren’t resinous or problematic. Would just prefer herbal and spicy notes to the light citrus and grass. Odd that you don’t get much of the brett. But perhaps it was added at primary? That may explain the heavy pepper and light sharpness that I associate with primary brett fermentation. Regardless, this is a very competent, ambitious saison that shows great promise from these brewers.
