Pale-to-beeswax golden, high clarity and a small, off-white head showing moderate to moderately low retention.
No mustard in the nose, or at least not initially. The malt is there, adding plentiful bread and honeycomb with soft peach and apple esters behind it and soft white pepper phenols, as well. No alcohol and perhaps just a touch more clove-like character than I’d prefer.
In the mouth it’s lightly sweet up front, turning dry, biscuity and with low but fairly engaging carbonation dispersing the honey-like malts about the palate pretty easily. Fruity esters abound as the mustard seed finally manifests itself on the very finish/retronasal. It’s dry, peppery/mustardy as one would expect and doesn’t really add much, I don’t think, other than the novel flavor. Very spicy yet not overdone. In some regard it’s nice it doesn’t run through the middle of the flavor, but I still maintain it doesn’t really add much.
