2017 750mL bottle pour at the brewery, 3/25/18.
Light gold-brass with a hint of amber. Clear with a white head fading steadily to ring.
Smells of light, soft Brett, light lacto and grainy malts/adjunct grains with a fair bit of soft cereal character woven in nicely to offset some of the acidity. Cherry and citrus sit on the end, very fruity and bright with no surplus of acid. No alcohol or flaw.
In the mouth there's cherry-like fruitiness from the blend of acetic and Brett acids that is lively and somewhat tart. Lightly malty with cereal and wood tannin keeping things quite soft. "Chewy"-like cereal grain textures continue to emerge as it warms. High attenuation and low but spritzy carbonation. Very nicely-developed Brett is neither too "bready" or citric. Deep, complex flavors and not too much acid, nor alcohol or flaw.
