Meaning “blood of the oak,” Sang du Chêne features sour strong blond and triple ales aged in three large format oak vessels: foudres, puncheons, and hogsheads. The oak influences provide flavors of toasted sugars, vanilla, and spice, complemented by the bright acidity and fruity character of the beer.

Kompleks, lekker ettersmak og crisp as a cracker.

Pours an amber colour with golden highlights. Light beige, kind of creamy head, with decent retention and some thick foamy-creamy lacing. Sour nose with lots of other fruity malts. Hints of the oak balancing things with the vanilla. The taste is quite sour, taking away most of the place. Hints of wood and toastiness. The sourness lingers for quite a while. The alcohol is very well-hidden, but was expecting way more from this one (for $25.90 a bottle). Not much showing from the Belgian Ale side of things. The Wild Ale takes it all.

750 ml corked & caged bottle, vintage 2015, Cardinal Pub & Bar, Stavanger. ABV is 9.6%. Hazy orange colour, moderate but shortlived white head. Fine aroma of farmhouse / brettanomyces, white wine vinegar, oak (new toasted American and French oak, and from cognac and wine barrels). Very sour and very oaky flavour, notes of vinegar.

Bottle: Poured a clear golden color ale with a large foamy head with minimal retention and some light lacing. Aroma of sour and acidity is dominant with some light sweet malt notes noticeable. Taste is mostly dominated by sour and acidity notes with some oak notes and some light sweet malt from the Tripel base. Body is about average with good carbonation with no apparent alcohol notes. A little bit too acid for my taste which limits the amount of complexity that can be tasted.
