Blending + Sour + Ninkasi

The art of blending has huge appreciation in the wine and whisky world but isn’t often talked about in terms of beer. Perhaps it’s considered a little too wild? Not for us.

Zintuki is Ninkasi’s younger, wilder sister (and goddess of food and dinner.) A perfect name for this blend of Ninkasi (our Celebratory beer made with a small amount of local apple juice) and Somerset Wild (a sour beer fermented using yeast and bacteria from local orchards).

A combination of the complexity and champagne spritziness of Ninkasi with the dry lemon acidic sharpness of Somerset Wild, gives a blend richly aromatic on the nose, refreshing on the tongue and deeply satisfying on the palate. Designed, and named, to be the perfect complement to food, this beer is heavenly with fish, chicken or cheese.

C: slightly murky orange
N: sour, dry, light brett, light champagne, faint cider
P: med bodied, light fermented apples, faint cider, dry, pasty, finish is a tad dull.

Old rating - 330ml bottle from JB's Brewhouse in Jersey & poured at home, it's cloudy orange with a white head. Aromas & tastes of apples, lemon, champagne, grain, funk & yeast. Medium body. Crisp dry mildly bitter finish. Enjoyable, but far from my favourite Wild Beer

Bottled (from Alko Prisma, Vaasa). Hazy golden colour, small white head. Aroma is floral, fruity, some citrus and mild tart tones. Flavour is tart fruits, floral and some herbal and mild wooden tones.

Thin beige head on an unclear golden coloured body. Zesty, sour, apple & white wine aroma. Medium to thin bodied, sharp, dry & clean. Herbal, white wine, sour cooking apple & yeast tastes with a chalky finish.

A golden beer, a head is small and blond. Aroma has grapes, lime, some green apple and sourness. Taste has sourness, fruitness of grapes, earthyness. Medium bodied. Pretty nice.

330mL bottle, pours a hazy golden with a small white head. Aroma is full of farty funk upfront, with a nice wild yeast presence. Flavour follows through, with farty funk, feet-like barnyard funk (but not sulphurous), with saison yeast, and some earthiness. This is all funk, which is a bit too feet-like, but there's a lemony character to it. Wouldn't call this complex, but the funk is somewhat nice. Decent.

Bottle, 0.33l. Aroma is musty, vinous, grainy and citrusy with barnyard note. Pours cloudy pale golden color with medium sized frothy white head, nice lacing and sparkling appearance. Taste starts sour grainy and funky vinous, following is medium sweet malty, mouthfeel is crisp and dry, while finish is mild bitter. Medium body, slick texture and lively carbonation in palate. Tart goddess...

33cl bottle from Abeervinum, Rimini, Italy. Pours brilliant gold, with fine white foam. Aroma is Brett, apple, barrel ageing. Body is average, like carbonation. Just a little astringency. Taste is medium acid and acetic, and a little fruity sweet. Final is slightly short. Overall, very interesting.

Golden, cloudy with a medium white head. Aroma of fruits, citrus with some red berries sense. Light/medium sour with a sour fruit and cherries end. Not fan of sour beers but this was alright. Bb 07.2020, bought at vinmonopolet.no nov2019
