Blending + Sour + Ninkasi
The art of blending has huge appreciation in the wine and whisky world but isn’t often talked about in terms of beer. Perhaps it’s considered a little too wild? Not for us.
Zintuki is Ninkasi’s younger, wilder sister (and goddess of food and dinner.) A perfect name for this blend of Ninkasi (our Celebratory beer made with a small amount of local apple juice) and Somerset Wild (a sour beer fermented using yeast and bacteria from local orchards).
A combination of the complexity and champagne spritziness of Ninkasi with the dry lemon acidic sharpness of Somerset Wild, gives a blend richly aromatic on the nose, refreshing on the tongue and deeply satisfying on the palate. Designed, and named, to be the perfect complement to food, this beer is heavenly with fish, chicken or cheese.

Bottle from Systembolaget. Hazy light yellow with a medium white head. A bit tart with citrus, some grapes, white wine and hints of honey. The body was light as was the bitterness.

330ml bottle. Pours cloudy pale orange with visible effervescence and a nice pillowy head. Aroma is all cider vinegar, with a nice apple note in a bunch of tartness. Flavour has a big tart hit to start, then there’s a muddy bread note then leading into tasty apple. It’s a real shame about that off note in the middle, because everything else about this is spot on. It looks enticing, it smells great, it pops and fizzes in the mouth. For such a low rating, this was so close to being fantastic. Really quite disappointing.

Draft glass @ Billie’s Bier Kafetaria. I wasn’t too crazy about regular Ninkasi & I disliked Somerset Wild so there isn’t any surprise that I didn’t like this one at all. Hazy citrus with a big white head. Nose is mellow wheat, sweet apple, sugar, faintly lactic, faint unflattering pickle,… Taste is weird boozy soapy rotting apple, fizzy, spoiled, massive soap, unpliant spoiled milk & low pickles, washing powder, dry plaster, lingering plaster & paper finish,… Thin & fizzy, powdery, plaster beer. Probably shouldn’t have order this.

Tap at billies. Pours unclear blonde, good white head. Smell is bit sour dry, vegetables. Taste is soft sour, bot fruity malty, even with a -almost-smoky undertone. Vey very far from a smoked beer’s taste though. Reminds of a gose , has a bit of a salty character to it. Not bad . For sure Unique !
