Days of Being Wild is a series inspired by the tradition of lambic style brewing in Belgium. This is the first mixed fermentation program of its kind in Asia. With a mixed-culture fermentation featuring a medley of wild yeast and bacteria strains in a single foeder, these beers have haunting complexity, natural farmhouse funk and refreshing fruitiness.
With our single-foeder sour ale as the base, we blended in a medley of mixed forest berries including blueberries, strawberries, raspberries, and fermented it a second time in brandy barrels. Intense berry flavors combined with funk and acidity from the base beer makes it incredibly complex, yet extremely refreshing.

Lots of red and Black Forest fruits on the nose. Gentle funk, vanilla from the barrel, well rounded.

Draught @ MBCC '17 [ Green Session ]. - Mikkeller Beer Copenhagen Celebration 2017, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark. [ As Young Master Days Of Being Wild - Mixed Forest Berries ].Unclear medium red colour with a average, frothy, good lacing, mostly lasting, off-white - pink head. Aroma is moderate berry - cherry, tart, forest berries, tart berries. Flavor is moderate sweet with a long duration, rapsberry, vherry, berries, forestberries. Draught at The Ale Project, Kowloon - Hong Kong, on October 7, 2017. As 20 cl pours.Listed at 6.7%.Cloudy yellow color, off-white head with some lacing. Both sweet and acidic, tart taste. Tart, some wheat aftertaste. Also fruity taste and aftertaste. Medium mouthfeel, very low bitterness. Acidic, fruity, a tad acetic scent. (Mosaic Dry Hopped).6/3/7/3/12=3.1

Pour from a bottle @ BeerFes Yokohama, September 17th, 2017. I think this was leftover from The International Beer Cup 2017, held at the same location during previous days. Light golden pour, not much carbo. Nose is sour, mango, funky and fruity. Taste nice fruity sour, full of berries. Really good. Some light spice tingle in the back of my throat, berries. Liking this, a lot.

Tap@MBCC May 2017, Copenhagen - red pour with pinkish head. Berry fruity notes, with some raspberry prominence, light sour, medium body, slight tart raspberry fruity finish.

Tap, sample. Tasted on the 13/05/2017 at MBCC (Copenhagen). Pink to red colour with a small pink head. Aroma of berries, brett and malts. Taste is intense berries and raspberries with a little sour and bretty finish. Next one please!
