When ripe, the pears are picked and pressed immediately and the resulting pulp is frozen. By freezing then gradually allow it to thaw when just above freezing the resulting concentrated sweet and syrupy pear concentrate is allowed to cold ferment for over 12 months.
The resulting drink is smooth and it fills the mouth with a wonderful sensation of sweet pears and caramel / toffee flavours.
Serve cold and makes a great accompaniment with cheeses and desserts especially Christmas Pudding!

Bottle 200ml. corked - clear glass @ [ The Stat Improver Tasting ] - Saxo, Højbjerg - Aarhus, Denmark. [ As Cold Hand Pyrus Danica 2015 ].Clear medium orange colour with virtually no head. Aroma is moderate wood, tobacco, cork, light apple - pear. Flavor is moderate to heavy sweet with a long duration, pear, wood, sweet pear, tobacco - oak - wood. Body is medium, texture is oily - syrupy, carbonation is flat, finish feel is light alcoholic. [20170617] 7-2-9-5-16

Bottle @ Johns. Pours deep golden, no head, light sugary lacings. Aroma of apples, pear, little sugar, wood, alcohol. Flavor is sweet, apples, pear, sugar, light toasted caramel, wood, alcohol. Medium to full body, oily mouthfeel, sweet finish with light warming alcohol. 7-3-9-5-16. 170617
