A well-rounded and balanced Old Ale, created in collaboration with Henry at Sunken Knave. Brewed using Chevalier heritage barley and aged in wood with a mixed culture of yeast and bacteria, the aroma consists of light caramel and honey with rich, funky red berry notes. Slightly tart with red wine characteristics, there are hints of balsamic and sour cherries; it’s remarkably light and easy drinking despite the complexity. In the glass it’s an appetising shade of copper red with an off white head; all in all an elegant beer that will continue to evolve in the bottle.

Bottle at ash's. Pours hazy deep orange, nose is caramel, toffee, oak, taste is bitter, harsh, acrid. 7/6/3/3/5

Bottle thanks to Ashton McCobb. Pours clear deep red brown with a thin white head. Aromas of wood spice and light funk, red fruit. Taste has complexity, wood, fruit again. Sour finish.

Bottle from Appellation Wines. Appearance - cloudy brown with an off-white head. Nose - balsamic and wood. A hint of sour cherry. Lanolin. Taste - more balsamic and woodiness. Some tart red fruit. Palate - medium bodied, tangy sour middle and finish. Great balance. Overall - very good. Maybe worth checking out in another 6 months too!
