Smoked eel has long been a specialty of the Siphon restaurant. The eels are smoked in a hut right beside the brewery. We huddle around the ashes on Autumn brew-days.

Cendre is a blend of styles from a variety of countries, with the chocolate malt character of a British stout, the seductive melon and pine profile of an American IPA and the drying citrus qualities of a Belgian Saison.

Malt: pale, munich, special b, chocolate, chocolate wheat. Hops: Citra. Yeast: saison EBC: 78.

Bottle Color: Almost black, light brown head. Aroma: Hoppy, roasted malt, citrus notes. Taste: Hoppy, some melon, hints of lemon, roasted malt, some cocoa, charcoal, subtle coffee notes, some pine, light hints of leather, yeasty hints. Dry roasty and yeasty finish. Medium body, just below average crbonation. Moderate sweet and over moderate to medium bitterness. Nice, unusual and complex mix of flavors.

(Bottle) Good looking beer on first pour. Pours black brown with ruby highlights and big loose tan head which disappears fairly quickly. Great complex aroma with tangy fruity hops, chocolate, dark roast malt. Light body with mouth filling carbonation. Taste has a tangy start, quickly joined by dark roast malt and chocolate, which give way in the finish to a mix of hop bitterness and burnt sugar bitterness. The finish is a bit brutal for my taste, but this is overall an unusual and enjoyable beer.

Dark brown color and a off-white head. Sweet & dark Schokolade..rather dryish.

Bottle. Dark brown pour. Nice aroma of zesty orange, peach, citrus, chocolate, yeast and coffee. Taste has bitter citrus, orange zest, creamy peach, chocolate, coffee, licorice, yeast and some caramelised malt. Very bitter and hoppy, tastes American instead of Belgian, which is good for an india saison. Well done, tasty beer.

Bottle from Dranken Vandewoude and drunk on a campsite with Nelson. Black beer lasting tan head. Hoppy aroma. more of a black ipa than a dark saison. it's fine. not my style but ok. some spiciness from the hop. ues it's fine.

Bottle at Neutnigenough, Brussels, 4th February 2020. Pours black. It’s over carbonated, but the aroma is like a typical BIPA, taste is a saison / BIPA hybrid, quite roasty, hoppy, but some farmhouse yeast, like it,

Bottle. Dark brown color. Roast, caramel, citrus and grassy hops in the aroma. Malty yet dry, thinnish. Citrus, soft roast, caramel. A firm grassy hopbitterness. Hint of yeast. Not bad at all.
