It’s the year the restaurant opened, frequented initially by fishermen who spent their days—not angling the rivers—but inside the Siphon, drinking beer. 1902 is a classic Belgian style—a golden Tripel of 8.5% ABV—but with a twist of honey and lavender. The addition of honey accentuates the rich nectar-like maltiness of the beer, and the distinct aromas of the lavender compliment both the floral, earthy hop profile and the banana-esque, apricot yeast flavours. Sampled at Zythos Beer Festival 2018. Hazy yellow color fluffy white head. Aroma of fresh fruit, hay, light spice. Taste is fruity lemon, light tartness. Tasty

Very fuse-like pearling to huge, ultra-dense & fine yellowish head, reasonably stable over pale clear copper beer. Sharp lavender nose, old lady's closest (some old spinster from 1902, maybe?), washing products. Herbal-bitterish flavour, again obviously lavender. Lots of restsugars, maybe a tad underfermented? Honey traceable because I know. Again quite prefumey. Feels pretty low on alcohol for an 8.5%, again - fermentation? - but the beer is not grist-filled. Probably the Siphon beer I liked least. Just too much lavender, too perfumey. Not my choice. 5/4/6/3/11

Sampled at zythod 2018. Thnx for sharing, everyone ! Pours unclear blonde. Smell is very spiced, herbal. Taste is herbal, soapy, hard to drink due to an overload of spices...

Bottle @ Multatuli, Ghent. Hazy golden colour, white foam. Sweet floral nose, notes of peach, honey, some banana and lots of lavender. A very well made tripel but too much lavender.

Spring tripel with honey and lavender, with historical theme, one of the latest Siphons to date. Thick and frothy, eggshell-white, papery lacing, stable head over a misty peach blonde beer with a fine yeast suspension and lively, fine strings of sparkling. Aroma of iced tea, apple juice, lavender soap, ginger, pineapple, honey, cooked sweet potatoes, jasmin, white bread, gin and some clear, but fortunately not too overpowering DMS (overcooked white cabbage). Fruity, quite colourful onset, banana, peach and pineapple notes, sourish edge around a sweet core with residual sugariness and finely tingling carb. Slick, lean body, quite 'clean' white bready and lightly caramelly malt sweetish body drenched in a lot of ethereal, almost soda- and perfume-like lavender spiciness, but once this passes a bit, a more delicate, fragrant honey aroma peeps through as well. Leafy hop bitter note and warming, brandy-ish alcohol in the finish, with a refreshing, bright citric effect lingering a bit over a bready yeasty end character. Sweet and spicy tripels are not my favorite beer (sub-sub)style but admittedly this one is quite intelligent, colourful and even refreshing in spite of its ABV; just too bad for that DMS note, though, something more of these Siphon beers seem to suffer from.

28/04/2018 – 10cl glass shared with an international ratebeer crew @ZBF2018 Hazy yellow, creamy white head. Nose is garden fruits, spices, herbal. Taste is fruits, mild spice, herbal, realy refreshing feeling.

Milde Süße, spritzig, deutlich Lavendel. Moderat Honig, eher trocken als süß, geringe Herbe, spritzig. Gut ausbalanciert. Passt. 10/9/11/10//11

Tap. Hazy golden color with white head. Aroma is spicy herbs, Belgian yeasts, phenolic and strawy. Taste is spicy yeasts, dough, herbal, earthy. Silky mouthfeel with medium carbonation. Well made, but boring.

Sample at ZBF 2018, thanks Belgian RB table. Dorée, col blanc . Arôme offre un bouquet plaisant de fleuri mettant de suite un bouquet de lavande bien en avant, le tout complété par de fines effluves de mielleux. Rétro-nasal reste belge dans l'aspect levure, bien balancé avec de belles notes de malt - cara pâle et léger pils. Palais est plaisant, rehaussé par cet ajout de miel où la lavande perce très bien sans pour cela tomber dans le surfait, tellement facile avec ce genre de fleur tout comme c’est la cas avec les pétales de roses. Petite fraicheur en fin de bouche, mielleux reste modéré ajoutant un effet 'cloying', fini reste cependant sec avec des grains distincts.
