Ourison represents the progression and evolution of our Saison fermentation program. Ourison is Our Saison, SaisonHands, left to condition in oak and then allowed to fully express itself via a lengthy bottle conditioning period. The end result is a highly refined snappy and pungent Saison that, I feel, is one of the most simplistic and exciting iterations of Saison that we have ever produced.

Area Four draught, 2/7/26.
Light lemony acidity with proper Sacch character adding pear and black pepper. Bit of herbal hop character with rustic grain. No crude esters or phenols and even the fruitiness is nicely restrained.
Lemony and with fantastic Sacch character and a touch of gentle, fruity Brett. Chewy, malty, dry. Balanced and refreshing. Lingering honey, black pepper and a touch of hop adding bitter herb and light lilac. Pretty exceptional fermentation character which makes or breaks a Saison.

Can. Poured a slightly hazy yellow color with a small, fizzy head. Aroma was light funky yeast. Light sour, but not overly tart - funky wild yeast. Light sweetness. Mild, enjoyable grains.

16 ounce can. Hazy yellow gold pour. Frothy white head. Fragrant, yeasty malt aroma hints at lemon and pear. Flavor mirrors nose. Earthy malt, lemon, white grapes and mild funk. Subtle notes of wood and grass on backend. Nicely executed.

Can (lengthy bottle conditioning period?). Yellow with a white head that's soon gone. 3- Aroma is funky with white grapes, oak, spicy grains, light honey. A little sour as well as the grainy funk with old lemons, white grapes, crackers before a modestly bitter dry finish. Started at 10C, better as it warmed a tad. Pretty good.

Cheers Eugene (Beastiefan2k) for the US pint can of this. Drank at my daughters place in Laguna Hills on 5th July 2024. Misted light lemon/grapefruit colour, no head. Tart citrus nature, lemon and limes to the fore, grapefruit too. It's what I call a 'dirty farmyard' Saison because of it's funky/brett like feel.

16 ounce can at Chadds Ford Winery. Light, hazy gold color, with a foamy head that dissipates quickly. The nose has toasty malts, with a bit of wild yeast apparent. The flavor is nicely tart, perhaps even a little more than usual in a farmhouse beer. I can also pick up quite a bit of the oak that this was fermented in. Certainly the most enjoyable part of traveling these days is finding lots of strange-looking local beers that I have never seen before, and probably will not see again when I return home.

hazy golden color. Light frothy head. Slightly tart, nice barrel character, funky yeastiness, some citrus and barnyard notes. Superb. Light body, slight tart, good barrel, barnyard, puffed wheat, medium carbonation, medium bitterness. Refreshing, balanced and great depth. Fantastic.
