This collaboration with Portage Brewing Company in Walker, MN and Working Draft Beer Company in Madison, WI is one of our most ambitious beers to date! Last summer we foraged wildflowers from an organic herb farm in Baraboo, WI (wild bergamot, yellow coneflower, black-eyed Susans, sunflowers, oxeye daisies, and more) and added them whole to inoculate the fresh wort with the naturally occurring yeast on the flowers' stems and petals. After several days, the beer was transferred into freshly dumped spontaneous barrels and allowed to ferment for six more months prior to bottle conditioning.
