Batten down the hatches and prepare yourself for a collaboration three years in the making. Toppling Goliath and Cellarmaker are releasing their own renditions of Midnight Sea, a blended bourbon-aged imperial stout. In February of 2020, the dark malt masters of Toppling Goliath visited our San Francisco brewery and devised a deeply rich stout recipe. This inky, oily magic was first aged in a variety of bourbon barrels including Weller, Early Times, Dickel, and Woodford Double Oaked. We then further aged Midnight Sea in a second set of Weller barrels. When it was time to bring the components together we worked closely with the crew from Toppling Goliath to create a profile that could stand on its own but also be half of a two-part blend with Toppling Goliath's own version of Midnight Sea. The confluence of these stouts is reflected in the artwork of the bottles where two parts of the same scene join into a more complete picture.

Bottle pours out black topped with a tan head. Nose is nice rich malts some coffee chocolate and barrel. Taste is more of the nice sweet chocolate roast malts molasses brown sugar and barrel

Bottle thanks to Matt. Pours black with small tan head that lasts. The aroma is strong roast, play doh, wood, bourbon. Slick body, dark chocolate, roast, molasses, wood, boozy finish, very nice.

Extra dark, inky, no head. Big bourbony nose, rich palate. Inky, bourbon, alcoholic warmth, balanced treatment, this is elegant and brutal at the same time.

Tap. Pours opaque black, small brown head, decent lacing. Aroma is bourbon, rich fudge, vanilla, oak, toffee, hint of molasses. Flavor is fully set, light plus bitter. A bit hot. Full body, creamy mouthfeel. Whoah.

On tap at CHoP. Aroma is very malt forward and abundant in chocolate with lighter notes of dark caramel and toffee. Lighter roast and honey notes. Medium light alcohol notes with light bourbon and faint oak notes. Some treacle and molasses. Pours jet black with a small, moderately thick, dark mocha head that recedes quickly to the edges where it lingers for a bit. Light lacing and long legs. Flavor is fairly sweet with loads of chocolate, both bakers and milk chocolate, dark toffee and caramel notes. Lighter notes of roast, honey, molasses and treacle with a bit of a burnt sugar note. Moderate bitterness and medium alcohol notes. Medium light bourbon notes and hints of oak. Light notes of raisin, dates and prunes. Mouthfeel is full bodied and creamy with low carbonation. Low astringency and medium low alcohol warmth. Overall, a really nice BA stout. Lots of malt character in aroma and flavor that is very chocolate forward. Nice complimentary barrel character. Alcohol in bitterness is well balanced.
