2016 SPON flor represents a curious case in our spontaneous fermentation program. The "flor" found in our sherry barrels migrated to some adjacent barrels containing 100% spontaneously fermented beer and impacted the fermentation. The result is a unique testament to the unpredictable and resilient nature of microorganisms.
2016 SPON flor was brewed in early 2014 using a turbid mash of 60% malted barley and 40% raw wheat, boiled for four hours with aged hops, cooled and innoculated overnight in our coolship with naturally occurring yeast and bacteria. 100% spontaneously fermented in oak barrels (no yeast or bacteria pitched), blended across the same vintage, and naturally conditioned for months in bottles resting on their side.

Bottle. Pours hazy orange with a fizzy white head. Aromas of peaches, funky cheese, light citrus, subtle oaky notes. Taste is lactic, peachy, lightly acetic, citrussy, light astringent bitterness and cheesy funk.

2016 version. Pours clear blonde. Médium small white head. Smell is tart, oaky, mild fruityness even ( was this aged on wine barrels or something?) lovely oak. No acetic acid, unlike some other American attempts to the style. Good start!
Taste is tart, sharp, very dry. Wet oak. Starts off nice and complex, but quickly fades to barely anything. Perhaps starts a bit too sour, even ( lactic acid) the nearly absence of aftertaste are a true miss. Carbonation is very high, which is of course acceptable for the style, but not my own preference. All and all, a more than decent attempt for the style. I've had better by jester King though, as well as some others. Yet I've had many more that can learn something from this beer.

Bottle at BenH crib, massive thanks to the main man himself! It pours clear golden with medium white head. The aroma is musty, earthy, vanilla, zingy, oak, floral, granny smith apple, lemon sherbet, pear skin and greengage. The taste is crisp, dry, bright, zingy, lemon - lime, zingy, gooseberry, lemonade, acidic kick, minerals, floral, wood, limey and sherbet with a drying finish. Medium body and fine carbonation. Zingy and tart. Fun stuff.

37.5 cl bottle. Pours cloudy orange with a small white head. Aroma is peachy and wooden. Sourish. Dry, wooden. Fruity. Mild citric. Lingering fruity. Slight fruity. Dry and citric. Lingering fruity finish.

375ml bottle at Kump's during non-Belgian lambics tasting. Blended on 2016-02-15. Pours a hazy golden with a weak white head. Aroma is funky with some slight black resin notes. Gueuze-like taste. Good.
