ot too long ago the beer world lost one of its modern icons, Pierre Celis. Pierre, almost singlehandedly, resurrected what is today one of the most popular styles of craft beer..the Belgian Wit or White Beer- a deliciously refreshing wheat beer originally created by Belgian farmers in the middle centuries, whose primary crop was wheat. Today, the style has a generous range-of-flavor and is often infused with a variety of spices, primarily coriander and dried citrus fruits. In keeping true to Mr. Celis’ homeland of Belgium we additionally brew ours with unmalted wheat using a very thorough mash regime. Here’s to you Pierre! (OG 11.9, Belgian Goblet) Editor’s note: We almost named this beer "Ill-Witted". No, not because we have a sick intellect, but because we actually brewed this beer with local wheat from...drum-roll please...Illinois!

Hazy yellow with a short, off-white head. Lemon and wheat aroma with a subtle hint of smokiness. Taste is wheat, malt, a little cream o’ wheat nuance. Pretty good.

Bottle. Coriander, lemon and wheat malt aroma. Hazy yellow with moderate head. Sweet orange-lemon, coriander, and wheat malt flavor. Solid - good witbier.
