Much of our work involves waiting. Making beer isn’t the fastest process, particularly with lagers and especially with barrels. So when we concocted this barrel fermented & conditioned Baltic Porter, one of the most crucial elements was time. We took freshly emptied, second use, 14-year Elijah Craig barrels and brewed straight into them with a blend of lager strains. After this beer was done fermenting, we moved the barrels into our walk-in cooler to lager for five weeks. Then we emptied the beer into stainless and let it lager for an additional six weeks. The result is a smooth, chocolatey, roasty Baltic Porter full of sweet fruit, roasted pecans, dried figs, vanilla, and toasted oak.

Medium brown, no head, sweet, bland, some bubblegum. Meh. Doesn't seem like Fort George but maybe sitting around for this many years...was the keg half empty before it sat around? Don't know but this wasn't effective for me at all.

On tap at John's Marketplace - SE Powell, pours a deep dark mahogany with a small beige head. Aroma brings out vanilla, dark fruits and some light coffee. Flavour is rich and complex, with vanilla, coffee, dark fruits and light liqueur. Really complex flavour depth, with deep dark fruits and only light sweetness on the finish. Excellent.

5oz. Appearance: dark copper with a tan head. Aroma: coffee, some chocolate, dark fruits. Taste: along the same lines, moderately sweet. Overall: pleasant, but without any evidence of barrel aging.
