This cuvée of three beers (a sour brown fermented with wild yeast, a blonde ale fermented with brettanomyces yeast and a clean saison) has been matured in a 2400 liter chianti foudre for 18 months before release. After maturation we only packaged two thirds and left the rest of the beer in the barrel, where it was topped up with fresh beer. A form of simplified solera system, that provides complexity and aged notes to the beer in a year or two.

Bottle 75 cl. Vintage 2015, bottle #1486/1559. Pours a hazy amber with a smallish, off-white head. Distinct Brett and Acetobacter aroma, noble rot. Medium body, rather fizzy mouthfeel. Dry, noble rot, overripe apples and a faint wooden note. Tart and vinous with hardly any bitterness. Interesting, but lacking a little depth and too much fizz. 250124

Bottled. Hazy golden colour with a small white head. Aroma is wood, some farmyard, funk as well as some floral tones. Flavour is sour wood, some citrus, brett, funk and mild spicy tones in the finish. Mouthdrying palate, but also a very good sipper.

Bottle, 6%. Good citric aroma, acetic, woody with some vanilla. Cloudy orange colour. Small pinkish head. The flavour is citric and fruity. The vanilla notes are unfortunately not detectable in the flavour for me. Very good. Smells better than it tastes.

Bottle, brewed in 2015. Pours cloudy amber with airy off-white head. Clear, vinous aroma with notes of malt and touches of fruit and hops. Dry and dusty flavour with touches of malt and yeast and fruit. Dry and dusty aftertaste with notes of basement. Nice.

Blend of an ‘oud bruin’, a blonde (American style) wild ale and a top-fermented classically Belgian style saison, aged on red wine barrels; typical product of this small Danish brewery and blendery, run by a lady named Jessica Andersen. Thanks to Dinka for sharing! Thin and open, quickly dissolving, off-white head on a hazy orangey-tinged peach blonde beer. Aroma of gooseberry juice, stewed apples, armpit sweat, sourdough, sour grapes, unripe green plums, yoghurt, wet oak wood, nectarine, dry cider, raw cinnamon, very dry white wine. Estery onset, sour with a thin sweetish core, hinting at green gooseberries, sour grapes and unripe nectarines; supple body with finely tingling carbonation. A strong streak of lactic tartness runs through a cleanly bready maltiness, in a most elegant and balanced way; similarly, the wood remains soft and elegant in the end, with lots of lingering yeast fruitiness, drying and quenching lactic sourness (even a tad lime-like) and a very light unripe stonefruit-like astringency. Very refined, almost ‘feminine’ I would say – a highly elegant, quenching, well-executed modern farmhouse sour indeed. Exemplary.

Bottle sample at a tasting at Lior D's place. Thanks Lior D. Clear deep golden. Funk, fruitiness, vinegar, oak, a bit sourish, a bit of spiciness, bitterish touch.

On tap @EurHop 2019 (Rome). Ambrata scarica, leggermente torbida, schiuma bianco-sporca media. Al naso note di frutta gialla, mela annurca, leggero bretta, terroso, legno, un tocco vinoso. In bocca è acida media, bilanciata, con note di frutta rossa e una media dolcezza maltata a bilanciare. Corpo medio, carbonazione media. Ottima.
