All Sparrow, No Sky is a blend of saison fermented and aged in oak and refermented on peaches.
This 2021 harvest beer was created from a blend spelt saison, wheat saison, and oat and wheat saison refermented on organic 'Diamond Princess' peaches grown in Selah, Washington by Collins Family Orchards.
This beer was refermented to condition in the bottle with raw honey from Cougar Canyon Apiary, harvested in Chiliwist, Washington on 09/25/21.

CBJ Bottleshare. Thanks to the group. A light haze on this pale gold bee, small and short lived pale cream colour head. Smooth palate, a mild dryness, good fine minerally carbonation. Soft winey grape vibe underpinned by a light creamy malt sweetness. Pine before a light smooth finish that also brings a mild wine tartness. Tres drinkable.

Bottle shared at cbj beer tasting. Many thanks.. A light hazed golden yellow straw coloured pour with a a loose white head. Aroma is big dungy wet diaper. Green shits. Apricot. Flavour is composed of semi peachy apricot, mineral. Harsh. Horsey funk. Juicy fruit. Palate is tangy.. Palate is semi sweet, tangy, juicy.

750ml @ Ryan's shared with Faress and Josh (thx for the beer, man!). Appearance: hazy pale golden with a quickly dissipating white head. Aroma: amazing sophisticated peaches with some light sweetness, juicy. Taste: pretty much along the same lines, but it's less intense in flavor. Overall: nice one.

Poured from 750mL bottle. Hazed gold with no head. Juicy peach, feint spelt, slightly more complex than 2021, very enjoyable.

Pale and hazy, With a slight head. Has quite a nice plummy aroma (yes, it's peaches, not plums), with a slight grainy accent to the base beer. On the palate, it's very soft, with a slight acidity, and then a big bright and quite frankly beautiful peach character.

750mL bottle, pours a clear golden with a small white head. Aroma is loaded with intense, juicy peaches, with a touch of bugs, but this is mostly a function of the wonderfully juicy peaches. Flavour is very juicy, with lots of juicy peaches, toasted grains, and some grittiness. Super juicy, with a spelt-like, toasted grainy finish. The peaches are what make this; the base seems less invigorating than I recall in the 2021 version. Very good.

750ml bottle pours out hazy straw topped with a white head. Nose is great big stone fruit blast, with a nice tartness. Taste is more of the nice sweet tart stone fruit some light spice.

Hazy. Quite pale, nice bugs. Peachy, bright pure and clean fruit on this. Solid underlying complexity. Everything on point.
