INGREDIENTS
Wheatland Spring Water
100% Estate grain (East Field)
Estate-captured yeast native to Wheatland (West Field)
Loudoun County Whole Leaf Hops
METHODS
Open Fermented
Barrel Rested for 8 months and bottle conditioned for another 8 months
Impressions of: sliced pear, wildflowers, apricot flesh, juniper, westerly winds
Violetta is a product of restraint. Unfiltered. Minimal intervention. It was made with water we drew from our natural source, grains we grew and harvested in our East Field, yeast native to our West Field, and hops from a small farm a few miles from us.
Carefully custom craft malted estate barley was left as close to its natural state as possible. Delicate esters from the wild-captured yeast dance playfully around the gentle malt base. After open fermenting in our barn loft, this ale rested in oak barrels before bottle conditioning.
The combination of ingredients and methods reflects our land, farming practices, and brewing approach at the time this beer was made.
From planting estate barley to presenting to you, Violetta has been in process for nearly three years.
