Cider with a little devil in it, but the dog doesn’t bite. The sound of the rain and the distant midnight train brings Georgia to mind. An elegant, spicy blend of Colfax Classic apple-wine superbly aged in Bourbon American whiskey barrels.
The final blend is finished with Georgia peach-juice, a hint of mint and a kiss of Tupelo honey aged in Bourbon barrels. Full whiskey notes right up front, layered,very smooth, toasted oak tannins and vanilla.Velvety peach and a hint of mint julep. Blended straight from whiskey barrels.Give a solid bottoms-up tilt and swirlto disperse sediment evenly to best enjoy whiskey aromas and unique bouquet. Best enjoyed at cellar temperature, 50/55F.With or without 1 or 2 ice cubes. Age-worthy.

Refrigerated 12 oz. brown bottle poured into a white wine glass. Pours hazy/cloudy golden. Aroma is apples/honey, medium body, no carbonation, and no lacing. Taste is whisky, honey, and hint of peaches. Flavors don’t meld for me.

This reminded me of a whiskey cocktail with plenty of fruit juice. Pours a pale, cloudy yellow with a small head. Aroma is whiskey, peach, mint, and obviously, plenty of apples. Taste is a crisp combination of peach, mint, vanilla, and whiskey. While this was complex and interesting, I am not sure if I really liked it all that much.

12 ounce bottle from Beer Run. Pours a hazy yellow-orange color with a frothy white head that actually sticks around. Aroma of big honey notes, mint, peach, butterscotch candy (not in a bad way) and a mild apple tartness. The taste is peaches, mint, apples, caramel, honey. Mild whiskey notes in the finish. Medium bodied with a bit of lingering spice. They went for a Southern-style cocktail… a peach julepy thing… and it works well. I can see how the flavors might be strange or over-bearing for some, but I like this quite a bit.

Bottle from Total Wine in Folsom, CA. Pours slightly translucent light gold with white bubbles. For aroma it’s mostly peach/mint. Med minus body. Flavor is honey, apple skins, mint, peach, and after a long time some oak, maybe bourbon. It’s rather smooth and drinkable. Not quite dry, but not very sweet - other than honey sticking to lips. Quite drinkable.

12 oz. bottle. Light, hazy, yellow, with a small, bubbly, off-white head. The aroma is peaches, vanilla, granny smith apples, and cinnamon. Sweet flavor, but a little tart and bitter. Medium body, acidic, and relatively dry. Overall, this is a confused mess of a cider. I appreciate what they are trying to do, but there is too much going on.

12oz bottle. Poured a completely translucent pale golden yellow color with a very small haze to it. Not a whole lot of head, but some nice carbonation. Aroma was bourbon barrels, sweet light cider. Flavor was pretty good, a nice cider with a smooth oak finish.

Pours hazy peach into a shaker. No head. Peach cobbler aromas. Sweet vanilla and mint upfront turning to peach before the lasting hot bourbon and pie crust finish.

Sample at the Ale Wine & Spirits beer tasting on 11/07/2013. Hazy golden color with a thin and foamy white head that dissipates quickly to a film. Spotty lacing. Aroma of peaches and subtle bourbon. Light to medium body with flavors of sweet peaches, oaky vanilla and mild booze. The finish is sweet with a vanilla and apple aftertaste. Surprisingly decent overall.
