In 2017, we set out to create a spontaneously fermented beer. Inoculated in two stainless steel vats overnight, the wort cooled down naturally. After two years of fermentation and maturation in oak wine barrels, 3 were carefully chosen, alongside a barrel of 18-month-old Coolship to make our first ever 100% Coolshipped beer!

This beer is naturally cooled in shallow stainless steel vats, borrowed from our neighbours at Westcombe Dairy. They were previously used for making their cheese curds and it’s very fitting given that our barrel library is in an ex-cheddar store. For a brewery like us that celebrates local terroir, a completely spontaneous beer was the dream

Shortlived, medium, white head over veiled, well-carbonated metallic orange beer. Sour, and a bit artificial (not disturbing), dry nose. Dry fruit, faintly vinous, welled sultanas. Sour, but with a lot of fruitsugars underneath. Again vinous. Dried apricots, dried strawberries in lemonjuice. Sour pineapple. Serious acidburn and -thinning, dry-out effect. Not very carbonated in the end. Nice, but - even when I'm very sorry to see this brewery gone - Wild Beer is just not in the league of players as Wild Creatures or Land & Labour, let alone the real lambic brewers. But it remains a fine beer.

Lingering sourness of green apples, has a slightly sharp throat burning finish, still it’s ok, got this one from Trevor B. I believe

750ml bottle - Pours a lightly hazed gold colour with an average sized foamy near white head. The aroma is oak, tart fruit and peppery spice. A tart and fruity sour taste, lemon, straw, funk, unripe apple and oak flavours with a drying sour finish.

Bottle at Joe's. Pours hazy deep orange, nose is huge funk, oak, apricot, taste is similar, tart fruit, oak, zesty citrus.

500 ml bottle online from Wild Beer. Pours light hazed orange copper with a white cap. Aroma: sour stone fruits, peach, apricot, oaky, light funk. Taste: tart, light sharp stone fruits, quite juicy. Medium body with some carbonation.

Bottle. Wild Beer online. Soft haze on a pale copper colour. Loose white foam is lasting and semi lacing. Nose has stone fruit esters. Pulped peach and nectarine. Wet oak. A little briny and mineraly. Taste is juicy and tart with a little stone fruit bitterness. Smooth and super juicy on the palate. Fine carbonation. Big juicy tart fruit finish. Might have to stockpile this one.

Keg at brewdog lothian road. Pours hazy golden amber, nose is pineapple, funk, citrus, oak, taste is quite tart, sharp funk, zesty, chewy oak, light sweetness.

Pours unclear blonde, small white head, relatively stable for the style. Scent is .. Cheesy. not sure if from the aged hops, or the cheddar-oak that was used to age this beer upon. Slightly sweaty, mild acidic touch. taste is full, strong sourness, mostly lactic acid, mild acetic acid , slightly sweaty. Not as cheesy here, but has hints ( I assume rather by the aged hops ) Perhaps a tad too sour to be true to style, but a very nice attempt with an original spin. Mild oakyness.

Bottle sample at a tasting at Yoav's place. Slightly hazy golden. Barnyard, oak, citrus, a bit of sweat, fruitiness, sour, juicy, a bit of lemon, a bit bitterish in the finish, lively but not overly strong carbonation. Great stuff.

Bottle. Favourite Beers, Cheltenham. Hazed gold. Slim ring of white foam. Nose has beautiful funk, along the lines of sitting in the Loon Factory or 3F, but over here. Apple skins and dusty shit. Taste is tart and dry with a big fruit sweetness. Smooth as you like. Fine carbonation. Tart and light dry finish. Lovely stuff.
