B/A/Y/S is an Imperial Stout aged on 100 year old, reclaimed chestnut. Hazelnuts and cherries were added for good measure earning this brew its acronym name. Aged in barrels from one of the first Organic Tequilierias in Mexico.

9 oz pour on draft at Pizzeria Paradiso Georgetown for their Extreme Beer tap takeover. Served in a snifter. Black with a finger of tan head. Aromas of tequila, lime, charred oak, dark chocolate, roasty notes. Tastes of dark chocolate, roasty notes, tequila, oak. Medium-full body with a dry finish. Low carbonation. Barrel character is nicely integrated.

Enjoyed at gabf 2014. It pours with a nice looking deep dark body that supports a modest sized mocha colored head. The aroma offers up chocolaty notes, nuttiness and then sort of toasted dark roasted malts. Wow, the taste is smooth, complex and integrated with lots of tasty chocolate notes, dark roasted malts and a slight berry flavor that has a bit of a sweet nectar quality. Into the finish the barrel character starts to come through with a bit of booze and bourbon. Wonderful beer.
