Collaboration No. 3 - Stingo was brewed using traditional English ingredients. A variety of ale and specialty malts from Yorkshire are at the forefront; their pronounced roasty aroma and flavor contain hints of toffee, cocoa and bread crust. English hop varieties contribute subtle herbal, peppery qualities. The beer was brewed in batches; some was fermented on oak, some was fermented normally, and some was allowed to sour in the mash tun before being transferred to a fermenter. Batches were then blended until desired levels of wood and tartness were achieved for the final product.

This one’s really nice. Sweet with some mild bitterness. Dark brown body with initial high foamy head, that settles into nice creamy, tight beige head. Aroma of roast grains, molasses, brown sugar wood. Taste is initially sweet, hint of dry burnt toast bitterness, finish is dry, mildly sweet (raisins?)

Bottle: Deep, amber-copper with a tall, tan head. Toffee malt aroma. Flavour is sweet, prune, toffee.... Very English. Pretty good stuff.

Bottle. Rock candy, caramel malt, hay and light alcohol aroma. Copper with moderate head. Sweet caramel malt, hay, and light alcohol flavor. Very nice.

750 ml bottle int tulip glass, bottled in 3/2012. Pours slightly hazy very dark reddish brown color with a 1 finger dense khaki head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass. Aromas of big raisin, apple, pear, caramel, toast, toffee, floral, pepper, oak, brown sugar, clove, light roast, light nuttiness, and toasted earthiness. Damn nice aromas with great balance and complexity of malt and fruity yeast notes; with good strength. Taste of caramel, raisin, apple, pear, fig, toast, molasses, toffee, biscuit, floral, nuttiness, oak, light chocolate, light roast, and toasted earthiness. Lingering notes of light and dark fruits, caramel, toast, molasses, toffee, biscuit, light roast, light chocolate, nuttiness, and toasted earthiness on the finish for a while. Damn nice balance and complexity of toasted malt and fruity ester flavors; with zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a slick and creamy mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an excellent English strong ale. All around nice balance and complexity of malt and fruity ester flavors; and very smooth to sip on. A very enjoyable offering.

Bottle. Dark brown colour with a beige head. Aroma is orange, malt, hop, caramel. Flavour is orange, malt, hop, caramel, bread. Full body. Nice beer.

Bottle 750ml. corked.Clear medium to dark brown colour with a average, creamy - frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, caramel, caramelized sugar, light to moderate hoppy, toffee, bread. Flavour is moderate to heavy sweet, light acidic and moderate bitter with a long duration, caramel, syrup. Body is medium, texture is oily, carbonation is soft. [20130216]

750 ml. Brown body with ruby highlights. Frothy, off-white head. Aroma of toasted grain, ash, roasted malts, chocolate, apple and toffee. The flavor is moderately sweet, lightly bitter and lightly acidic. It finishes lightly to moderately sweet and lightly to moderately bitter and lightly to moderately acidic, with a tartness in the end. Medium body, watery texture that turns syrupy in the finish, lively carbonation. Its flavors are muddled and you mostly remember the sour apple, vinegar, cardboard, alcohol. Just not working very well.

2012 Bottle. Pours with a murky deeper brown/bronze hued body with a large and retentive lightly tan head. Some lace. Aromas are of caramel, burnt caramel, baked bread. Mild esters, some metal, chocolate, tobacco. Earthy, woody, pencil shavings. Damp leaves, unsweetened banana bread. Flavors are malty, nutty, woody, with a light acidity. Lots of tobacco, damp leaves, baked bread. Caramel, brown sugar. Mild earth. Nutty (almonds). Long duration. Very subtle acidity. Medium dry finish despite the maltiness. Some light earthy tannins. Mild esters, chocolate covered banana. Very full carbonation, fuller bodied, warming. A touch underwhelming.

Pours hazy brown with a off-white head. Aroma has notes malt, caramel and brown sugar. Taste is medium sweet and light bitter. Body is medium, texture is oily, carbonation is soft.

Bottle. An almost clear one, brown in color and with a small, dense, beige head. Toffeeish and bready aroma with some fruity hints. The flavor is pretty much the same, quite sweetish. Fruity and bready, with toffee hints. Dry and quite pleasantly carbonated. Lasting finish with a pleasant alcohol warmth. A quite pleasant one, but too one dimensional. 130216
