This blend of strong dark porters was aged in oak, wine and Bourbon barrels, then blended with a dark porter that had been brewed with vanilla beans and cinnamon. The blend was then aged an additional 14 months on dates

Bottle 750ml. @ PBF 2011Clear dark red brown colour with a small large, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, roasted, caramel, chocolate, funky, tart, wood, medicine, bourbon. Flavour is heavy sweet, light to moderate acidic and heavy bitter with a long duration. Body is medium, texture is oily, carbonation is soft. [20110701]

Nice dark brown color with a little red glow coming through. Almost no head. Sour smell. Taste sour, wine, herbs, wood and port but even though it’s very complex it’s still very nicely balanced. Good mouthfeel.

Bottled. Very deep ruby red colour with small beige head. Aroma is tart wood, some mild wooden notes as well as liquorice and mild alcohol. Flavour is much the same. A quite pleasantly nice balanced one,.

Dark brown color, small beige head. Sour, woody, fruity aroma. Medium-bodied. Some cocoa, licorice, tart, sweetish vanilla and bourbon flavor. Very whiskey-alcoholic aftertaste with tartness.

750ml bottle-pours a retining thin light brown head and brown color. Aroma is sour, medium malt, wood/vinuous. Taste is sour dark fruit-cherry/plum, medium malt, wood/vinuous. I didn’t get any bourbon.

75 cL bottle. Pours hazy dark brown with a small tan head. Aroma is fruity and slight acidic. Dry and fruity aroma. Citric and fruity flavoured. Bitter and citric finish.

750ml bottle Pours out darker brown topped with a tan head. Aroma was of bourbon, oak, vanilla, pit fruit, and funk. Taste was much as the aroma with the bourbon leading the way. I have to say I was really excited to try this as soon as I heard about it. When we opened it what a letdown, but as it sat it opened up and made a comeback. Unfortunately it didn’t live up to my hopes.

moderately sour mouth, notes of bourbon, oaky, vanilla beans, a touch of chocolate. Alcohol is well hidden. Moderately sour finish with a touch of brett. Sour dark cherries linger as well. Bourbon and funk dominate the nose. Nice.

Bottle @ Seabass going away party, Jan15th ’11. Courtesy of Ryan. Encore une bière de cascade qui laisse bouche-bée de par sa complexité. Brune, col est fin beige. Une fine aigreur et vinaigre se dégage du nez et en bouche, note de vin de Porto avec du raisin, chêne. Pour 12% elle reste bien légère en bouche, le bourbon y est présent avec des notes de tonneau de chêne.

Bottle shared at the Ann Arbor Cascade Tasting. Poured a cloudy deep brown with a brown head that dissipated slowly to the edges. Aroma had a bit of alcohol, but mainly consisted of tart red fruits and a note of dry red wine. Flavor started with tart, slightly acidic red fruit and finished with a bit of a bourbon note in the finish.
