This tavern strength farmhouse beer is first fermented with Saison yeast and then with a blend of Lactobacillus and Brettonamyces whilst ageing in oak foudres. The result is tart, crisp, slightly sour and incredibly refreshing.

Bottle. Probably online. Mostly clear gold. Very decent white swede. These newer BS have lost the wheat thing. Sharp and fresh. Lemon leafy grassy hop. Touch of oak. Lovely crisp mouthfeel. Soft bitterness. White wine oak to finish. Good gear.

Draft. A hazy golden beer with a beige head. The aroma has notes of spices, citrus fruits, yeast, hops, and malt. The flavor is sweet with notes of spices, lemons, yeast, hops, and malt, leading to a dry finish.

Bottle at home in Hackney - picked up from the brewery website. Pours clear honey-gold with a creamy, white topping. Gorgeous stuff, salty-sweet, nice lemony bite, decent acidity, lemon candies, restrained funk, a touch of white wine vinegar. Medium bodied with delicate carbonation. Clean and quenching finish. Outstanding.
