We started brewing Caos in 2012. During the years we changed the way to make it getting closer to its “sister” L’Equilibrista. We now use 40% of Malvasia wine must (courtesy of Tenuta di Bibbiano, Siena, Tuscany) and 60% of wort (always our beloved Duchessa) and after the bottling we start a year long “Metodo Classico” process in all its steps. 36 The name “Malvasia” characterizes many vines, mostly whites, scattered all around Italy. All these vines share, with varying intensity, clean apricot and yellow fruit nuances, delicate musk fragrance and a very high sugar residue. These characteristics make the Malvasia vines particularly suitable for production of sparkling wines and “Passito”. This is why we choose this grape for our Caos, a great combination of fruity and oral aromas with the refreshing acidity typical of the white grapes. The vinous pro le is prominent but the complexity of taste and aromas are wonderfully supported by the elegant perlage and the smoothness of Duchessa. The result is explosive: an impressive freshness and a unique taste. Following the grape harvest, year after year we nd new, intriguing nuances, just like the wine tradition.

Tap@Borefts 2016, Bodegraven - pours golden amber with white head. Light to medium sour fruity aroma and taste, acidic, grapes, some grassy and herbal hoppy notes, light spice in the finish.

[9/23/16] Draught sample at Borefts Beer Festival 2016 in Bodegraven. Day one. Golden. Aroma of grapes, a bit of funk. Tart flavor, fruity, funky, with grapes. Medium-bodied.

At BBF,clear palish yellow, fruity grapey aroma, mellow fruity sourness, spice and vinous notes coming through and be coming dominant, empathic sourness with a complementing sweetness. Nice and interesting.

On tap at Borefts ’16. Listed at 10.9% in the booklet. Clear golden colour, white head. Aroma of white wine, lots of grapes, Champagne, citrus, apple. Flavour is light to medium sweet, light tart, white wine/grapes, sparkling white wine, apple, light floral, alcohol. Medium bodied. OK.

Thank you for sharing BE & friends RB Crew! Sampled draft @ Borefts 2016. Day 2. Hazy golden with little white head. Nose is massive Cava, white wine, white grapes, some sweet fruit. Taste is really akin to Cava (far better than most Cava), lightly boozy, flowers, white grape, sparkling. Thicker than Cava-body wise. Feels more Cava than beer, milky white grape boozy, minor funk, white grape skins. Interesting hybrid. Enjoyed it for sure.

Draft @ Borefts 2016. Shared with RB Belgian crew. Dorée laissant apparaitre un profile presque paille, col blanc avec de fines bulles le long du verre et du col. Arôme au bouquet malté, pâle, pils et cara rétro fruité de raisin - mosto di vino - conférant une certaine fraicheur nasale de raisin e de vin blanc. Plais est léger, faible au niveau effervescence avec un fruité persistant fortement imprégné du raisin blanc, Levure reste aussi bien présente avec une approche presque belge. Le tout reste un peu décevant sans parvenir à arriver à une complexité comme ce que l’on retrouve chez Loverbeer par exemple.
