Copper spontaneous-fermented beer matured in oak barrels, the "classic" craft beer for meditation. Behind it there is the same inspiration of our Divina, infact it has sour, vinous and fruity hints, with slight wild-flowers notes.

Excellent with red meat, herbal cheeses and goat cheeses, shellfish and fruit tarts.

Good as aperitif, not just during the summer, but also during the coldest seasons.

750 mL bottle, much thanks to Alberto for the share! Love the Italian sours that I have had the pleasure of coming across. Cloudy orange pour with a thick, lasting foam head. Sour aroma with some peach and orange. Flavor is sour fruit, but a bit dry and dusty. Lingering tart bite. Solid sour. Never had a sour red/brown this light in color, and in this mild of flavor. Overall I enjoyed this a ton.

750mL capped bottle from Alberto by way of luttonm. It’s definitely a heady beer, sooooo much head but not a gusher. So, apparently this is a sour barley wine. This is definitely a sour barleywine, love the sourness and the base barleywine seems fun. The combo is a bit interesting. Sweet, wet malts and acidic sourness. I like the beer but the parts are worse than the whole. Q

New Beer Distributors, NYc 750ml: pours light brownish with a white head. Aroma is a lot of wood and cherries and some vinegar. Taste is rather sou. Not really all that sweet. Seems a bit unbalanced to me, as if it does not really know where to go with itself. Plenty sour aftertaste. Not a huge fan.

Bottle sample at Iron Gate. Almost a gusher, but not quite. Clear golden color, massive white head. Aroma has dusty cobwebs, light tannins, rotten overripe cherries. Taste is profoundly earthy, dank, sweaty, dirty, dusty cherries and vanilla. Not for the faint of heart.

I have liked Panil for a long time, especially after finding several beers from them in Florence that I have not seen at home before or since. Light brown color. Very well carbonated, which more and more I think European brewers are getting right. A bit like a saison. Not very strong flavors, and not particularly sour, but there is yeast, mild sourness, and an earthy quality that I enjoyed an found refreshing. The carbonation helps this beer considerably.

Green bottle, 1 pint 9.4 ounces, batch #1, bottle 1454, 2013 vintage, from and with Ian Guénard (merci!), savoured on May 1st 2015; eye: amber, hazy, voluminous off-white head, light lacing; nose: earthy, wild yeasts, light cheese; mouth: earthy, wild yeasts, light cheese, finale in cherry with presence of acridness, medium body, average carbonation, lightly sweet, slick texture; overall: disappointing FRANÇAIS Bouteille verte, 1 pinte 9,4 onces, lot #1, bouteille 1454, millésime 2013, de et avec Ian Guénard (merci!), savourée le 1er mai 2015; œil : ambrée, voilée, mousse blanc cassé volumineuse, légère dentelle; nez : terreux, levures sauvages, léger fromage; bouche : terreux, levures sauvages, léger fromage, finale en cerise avec présence d’âcreté, corps moyen, carbonatation moyenne, légèrement sucrée, texture coulante; en résumé : décevante

Fresh sour nose, slightly smooth. Not deep. Fresh and too much carbonation. The aftertaste os smooth, slightly sour and not too seep. Fresh sour and slightly sweet. Interesting. 10/12/9/10

Säuerlicher, deutlich zu stark karbonisierter Antrunk. Dabei auch etwas süß, mild fruchtig, dezente Honignoten. Fruchtig nach Pfirsichen, dezente Säuerlichkeit. 11/11/12/9/11

Pours cloudy reddish brown color with off white head. Sour vinegar aroma with some oak. Similar flavors. Medium body with average carbonation. There are much better, less expensive beers in this style.
