Salvador Cybies is our “Crooked Stave” take on a Dark Belgian Strong brewed in hommage of my Siberian Husky that I had through my 20’s. A dear member of my family and our early brewing team, Cybies had many nicknames. Salvador Cybies being one of them, this version was aged in well used Leopold Brothers American Small Batch Whiskey barrels with Sour Cherries harvested from the Colorado western slope. Like man’s favorite companion, this beer is worth snuggling up to, maybe with the fire place lit and relaxing after a great day.

Draught@CBC2016. Deep reddish brown colour, small off-white head. Aroma is nutty, some fruity and wooden notes with mild tartness to it. Flavour is wooden, fruity, floral and some slight nutty and sour notes. Yet balanced. A bit oud bruin over it.

Small retreating cream-coloured head over opaque, deep red-brown beer. Very fruity nose, red fruit, fruitconcentrate, caramel. Soupy flavour - coriander is my guesstimate - overlying pretty sour dark fruit flavours, which are more than presumably (sour) cherries. Acidthinning, sharp and tart. Medium carbonation, fruitfilled and -slick. This is quite a good beer. Relieved of this soupy (coriander?) addition, it would be a really great beer. PS, the lettering looks very artistic, but if not for the classification here, I wouldn't have been able to make out the "Cybies (or Cybíes)" word. What does it mean, BTW?

From a 75 ml bottle at the Roadhouse Beer Pairing Dinner January 16. Clear reddish mahogany pour. Aromas are tart dark cherries. Flavors are sour cherries. Really nice beer.

Tap At Gollem. Pours dark brown. Smell is intense, tart, oak, cherries. Taste is tart, astingent, sour, cherries, oak, full, fairly complex ( not as much as a lambic, but very complex for an american wild ale ) Dry. perhaps too sout for it's own good, removing some of the balance. Fairly good beer.

Beautiful bottle, beautiful story, beautiful crisp dark Belgian sour. Nice dark cherry back with slight funky nose and front.

On tap at Republic. Pours a clear dark amber with a tan head that dissipates quickly to the edges. Aroma has sour cherry and oak with a bit of sweet grain underlying. Flavor combines sour cherry, acid and oak plus some sweet grains backing.

harvest 2016. clear amber brown, practically no head. very nice spicy vinegar belgian sour, woody aroma. cherries. Flavor is very very sourish, with a lot of sweet cherries on top of that, the alc. level is quite high and i think i can taste the alc. a little bit which is not that nice again for me. It all leaves a little bit of a sweet muddled up sensation. Anyway, as always a super tasty sour from the stave, but this is not one of their best imo.
