This beer is dedicated to my mother … and to the memory of our Irish roots.

An unusual Irish stout made with seaweed (called dulse in Ireland) gathered from the coast near Belfast and smoked over an oak wood fire.

There is an ever-so-slight saltiness on the mouth and a smoky background to the nose: sea and burning oak.

Bottle thanks to Alberto. Pours a brown color with a medium white head. A big sweet chocolate ashy nose. The flavor is light smoke, fruity, salty, very smoky. Good.

Cask (gravity) @ 31th Pigs Ear Beer and Cider Festival 2014, at The Round Chapel in Hackney, London, England [ As Hilltop Gallagher Stout ].Clear dark brown color with a small to average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, roasted, light chocolate, light coffee. Flavor is moderate to light heavy sweet and bitter with a long duration, roasted, dark malt, ash notes, smooth. Body is medium, texture is oily to watery, carbonation is soft. [20141202]

On tap at Brassicula fest in Rome-Italy. Pours black, incredibly persistent ivory cap. Nose: clean coffee beans, a bit oysters. Mouth: watery, salty, easy, balanced stout with roasted soft character. ---Rated via Beer Buddy for iPhone

On tap @Bir&Fud (Rome). Pours deep brown with a medium and persistent beige head. Aroma of mocha, roasted malts, light smoked notes, good. Flavour is awesome, lots of coffee notes, light smokey notes, dry, drinkable. Light body, light carbonation. Awesome dry stout!

Gravity dispense at Pigs Ear ’14, day 1, 02/12/14. Black with a decent tan covering that retains well. Nose is light roast, charr, dark toffee, whisper of dark fruit. Taste comprises light Germaline, charr, dark fruit rinds, light cocoa rub, nutty, roasted tones. Medium bodied, fine carbonation, semi drying close. Adeqaute stout.

This was the standout for me among the Hill Top beers at Birre in Festa. Made with smoked Irish seaweed this stout is a cola black with a tan head. The seaweed gives it that umami savouriness with a touch of smoke & roasted dark malts. The taste is great a lovely smokey roasted chocolate.

2nd December 2014
Pigs Ear. Cask. Opaque black - brown beer, small pale tan head. Palate is light and semi dry. Mild fine carbonation. Smooth and tangy dark malts, some lactose like sweetness. Nice generic fruits. Mild dark chocolate. Light dry finish. Not bad.
