A fruity wine made with pure South Dakota honey and ripe red raspberries.

For John Stolle, honey is more than a business. The beekeeper has been producing honey in western South Dakota for nearly 20 years.

His couple million bees are his partners. John’s first priority is his bees’ health.

He harvests only the honey that the bees produce in excess of their needs, leaving them enough of the honey for their own uses.

John and his dad run the honey business together, moving the hives, caring for the bees, and harvesting and processing the honey and wax.

The bees have access to the open fields of clover, alfalfa, and wildflowers that surround Bear Butte near the legendary Black Hills town of Sturgis, South Dakota, and have never known an herbicide or insecticide.

Honey is a natural food, and John Stolle produces it naturally.

So when we put it in our Raspberry Honeywine, you know it’ll be naturally delicious.

Sampled at the winery. Clear, pinkish-yellow color, with a few bubbles, but no head. The aroma is wildflowers and honey, with a sharp hint of berries. Lovely, off-dry flavor, and just a bit of tartness. Fairly thick and syrupy, with a crisp, acidic bite. Quality mead.

Tasting at Papsø
Hazy red color. The aroma has light fruit, but it’s also puckery. Sweetish fruity soft-drink flavor. Not a Mead, and not interesting.

Bottled. A deep red mead. The aroma has notes of raspberries, and light notes of honey - and sugar. The flavor is sweet yet with a lightly acidic impression from the raspberries on a light honey back ground - more like a raspberry wine than a mead. The finish is lightly tart with a light bite in the tongue. Thanks Papsoe for sharing.
