A Franco-Japanese composition by Regis Camus in collaboration with Dassai. Nose: delicately floral, grape, apple, lush tropical fruit. Flavour: early summer pears, wild red berries, muscat grapes. Pairs well with grilled fish, lobster, uni, tiramisu, chocolate fondant. Serve chilled at 10 - 15° C. Rice type: Yamada Nishiki sake rice. Polishing ratio (seimaibuai) (精米歩合): below 50%. Sake Meter Value (nihonshudo) (日本酒度): +3. Acidity (sando) (酸度): 1.4. Ingredients: rice, water, koji. Bottle size: 720 ml.

Drank at room temperature. The liquid is colorless. The olfactory intensity is high and sufficiently prolonged. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas traces impressions of melon, pear, apricot, gin and popcorn. The first impression of intensity in the mouth is of undecided sake. The body is round. The taste intensity is normal, and the taste persistence is sufficient. The taste is pleasant. The final mouth sensations are easy to drink. On the palate, notes of vanilla, peach, white peach, melon, fruit, pear, anise and dried apricot prevail for a fruity aroma and a light taste.
