Tim loves a quad and there's no better time than the holidays to make one. We've piled in pilsner malt, classic Belgian monastery yeast, some herbal and citrusy hops, and steeped mulling spices and cracked green peppercorns. The result? Plum and elderberry nose. Mahogany, thin tan head. Plum, raisin, charred oak. Medium body, easy carbonation. Nicely done.

$12.99 corked bomber, Beer Run. Cork is a PITA to get out. Pours dark brown with a reddish huge in the might, small tan head, lots of carbonation in the glass. Aroma is immediate spice: cinnamon and nutmeg, yeast, cherry, fig, other dark fruit. Flavor is boozy cherry, spice, yeast, caramel, bubblegum. Very sweet, but not cloying.
