Le cidre Comte Louis de Lauriston est élaboré à partir d'une trentaine de variétés de pommes à cidre, dont une majorité de pommes amères (70%) riches en tannins qui lui confèrent son corps, 20% de pommes douces qui apportent leurs arômes fruités et 10 % de type acidulées pour équilibrer la structure en bouche.

Les pommes à maturité sont ramassées, broyées puis pressées pour en extraire le jus. Grâce au contrôle des températures, la fermentation reste lente. Le cidre Brut est ensuite embouteillé à 4,5%. Une deuxième fermentation consommant les sucres résiduels démarre alors en bouteille, conférant ainsi au cidre son aspect pétillant.

Il se boit frais, idéalement dans un verre à vin.

Bottled@PBF XII. Golden colour, small white head. Aroma is apples, some fruity and yeasty tones with mild vanilla. Flavou ris apples, some yeast, mild toffee and some fructose to it. Smooth and refreshing.

75cl bottle from Chester Beer & Wine. Pours gold with a faint mist. Very lightly fruity nose. Thin to taste and quite dry for a brut, could be a lot fruitier, and certainly there seems to be much better in Normandy.

Bottle from Fountainhall Wines, Aberdeen. It pours fairly clear pale orange with a small fizzy white head. The fairly sweet, powdery apple, fizzy candy, apple sherbet, apple skin, earthy, hay and oak. The taste is crisp, dry, bitter - sweet initially, leafy, earthy, apple skin, powdery, vinous, sweet apple wine, fizzy candy / sherbet, light acidity and touch of tannin with a dry finish. Medium body and moderate, fizzy / effervescent carbonation. Maybe a touch sweet?, but pretty classy stuff anyhow.

750ml wired cork bottle from Cork & Cask. Opened with a pop. Sparkling orangey gold colour, sort-lived white foam head and aroma of tangy apple, tannin, caramel hint. Taste is sweetish, juicy apple, fruity, with caramel, alittle funk, some tartness and soft tannins. Medium bodied, spritzy carbonation, medium-dry tangy finish. Nicely drinkable.

75 cl bottle @ home Aroma has ripe apples and some apple peel. Leathery palate. Flavour has ripe apples, some sweet fruity notes and some green apples. Dryish and leathery finish. Perhaps a bit too floury but othervise quite nice Normandian.

75cl bottle @ PBF XII. Poured clear golden color with a thin white head. Sweet pear and apples, mild funk in aroma. Flavor has sweet pears, apples, sugar and mild funkyness. Pleasant.

Bottled at PBF XII. Clear golden. Aroma of cellared apples and hay. Mid sweet with light body and well rounded mouthfeel, low carbonation. Cobwebs, musky apples. Light apple skin bitterness.

Bottle sample at ANXO Sighting. Crystal clear deep golden copper color, champagne head. Aroma has apple, orange liqueur, peach. Taste has dusty apple skin, bone dry. Delicious.

Bottle from Magasin du Nord, CPH - clear golden pour with tiny bubbly head. Aroma and taste comprises sweet orchard crisp apples, acidic, citric, some wooden notes, lots going on here, lovely drop.

bardzo dobry cydr wytrawny prosto z normandii, piana i wysycenie spore, kolor ciemno zloty, wlasciwie bursztynowy. Bardzo wytrawny w smaku jakby zgnile i porzadne sfermentowane jablka. Bardzo lubie taki cydr bez cienia slodyczy i pelnej wytrawnosci. Na uwage zasluguje elegancka papierowa etykieta niczym z drogich francuskich win.
