YELLOW THING is an IPA fermented with Saccharomyces brux-like Trois – a Belgian yeast strain traditionally used for wild fermentations.

This IPA comes off the back of our brewer Jonny wanting to make a ‘pineapple bomb of a beer’. We’ve paired the mango and pineapple-like esters produced by this yeast with the hop Sultana – big pineapple aroma! Alongside this we’ve used a pale, oaty malt bill and a bit of Citra for an IPA rich in tropical aromas. Finishes nice and dry this one.

Can at home in Hackney - picked up from E5. Pours just slightly unclear yellow-gold with a foamy, white head. Medium sweet flavour with a nice dank melon character, pine, tangerine. Medium bodied with fine to average carbonation. Balanced finish, supportive pale malts, more melon, mango, tangerine, light pine. Good sauce.
