Narcissus is a non traditional interpretation of a lambic blend using 60% young Double IPA with 40% 1 year old Spontalis.

Spontalis is 100% spontaneously fermented (No cultured yeast or bacteria is added whatsoever) by sitting in our coolship for 16 hours and then undergoing fermentation in oak barrels. The Double IPA was brewed with Centennial, Ella & Styrian Goldings and matured in wine barrels for 4 months.

750mL bottle, 9 years old, drunk 4/2/2025.
Good clarity and a rich amber-brass color. Fluffy-to-creamy, butter-tinted head.
Fruity, moderately tart Brett is the first thing I smell, followed by a touch of caramel and toast. Very mellow and well-aged with zero aggressivity from the acid profile. Fruity, complex, tons of mineral and mild funk.
Rich and malty with zesty, moderately tart acidity and tons of fruit from aged hops and Brett. Moderate lactic character with some toast and caramel from the malt. Juicy raspberry-like fruits retronasal. Little/no oxidation; certainly no more than you'd expect at this point. Still very well-carbonated with a tight and spritzy character to it. Juicy, almost, with excellent balance and no acetic any where. Wood is dry, low in tannin with no toast.
