Imperial Stout + Wine Barrels + Time

The decadence in this beer is derived from our imperial stout base of Wildebeest. It's been accentuated by a hint of acidity and fruit character picked from its barrel ageing in Pinot Noir barrels for upwards to 2 years!

Draft at In De Wildeman. Black with a ring tan head. Aroma of dark chocolate, oak barrel, vinous notes, caramel, vanilla, fudge, leather and overripe dark fruits. Flavour is heavy sweet and above moderate bitter. Full bodied with a thick chewy texture, alcohol warmth and soft carbonation.

Tap @ In De Wildeman, 15cl. Black color. Somewhat frothy brown head. Aroma’s: sweet, vinous, light umami, wood. Retronasal it’s vinous, woody, boozy, fruit, cherry bonbon. Flavor is moderate sweet, vinous, woody, light fruity sour. Quite strong alcohol feel. Medium bodied. Finishes woody, roasted, light bitter. Quite complex, but for me it could have been a little less vinous.

Bottle split at Bruce’s pad, 29/01/15 - thanks to Kenaldo. Black with a decent tan covering that dissipates to a swirl and edgeing. Nose is wooded, spice, red wine notes, red berry tang, musty red grape, vanilla essence. Taste comprises bitter red berry, damp wood, light chocolate, charr, more red grape notes, touch funky. Medium + body, fine carbonation, semi drying close. Decent tangy BA impy.

750ml bottle from Cornelius, shared at home with the Mrs. Pours opaque brown, thin beige head. Aromas of red wine, chocolate, woody, light sour, light molasses. Taste is more red wine, strong tannins, chocolate at the back. Wildebeest is in there, and it hadn’t been thinned out too much by the pinot noir barrels, but it has been tamed a little, and made much more vinous. Rich and challenging... a 330 shared between two would have been plenty.

Tasting at Bruce’s. Opaque dark brown beer, bubbly tan head. Palate is smooth and semi dry, good fine carbonation. Mildly vinous nose. Mellow dark malts with a little malt cream and unsweet chocolate. Nice red wine. Fruity but not over dominant. Trace of dry wood gives a slight savoury edge. Semi dry finish. Pretty tasty.

Bottle thanks to Bitch Mitchy. It pours jet black with a small beige head. The nose is sweet, vinous, some acidity, vanilla, nougat, marshmallow, chocolate, pepper and jammy fruits. The taste is smooth, rich chocolate cake, maltesers, warming alcohol, cold press coffee, earth, berry, dark fruits and black forest gateaux. Medium-full body, fine carbonation and creamy mouth-feel. Jammy and chocolatey. Not quite the depth I had hoped for, but enjoyable anyhow.

Bottle shared in London - big thanks to Mitch. Pours mostly clear, deep brown with a bubbly tan head. The aroma holds some old wood, ripe berries, dark malts. Medium sweet flavor with strong, lightly burnt wood, leather, earth. Medium to full bodied with fine to average carbonation. Lightly oily. Warming finish with further moist, torched wood, old dried dark fruits, figs, raisins, burnt wood, earth, cherries. Very nice.
