Our fourth version of Luna & Fuego Mexican Hot Chocolate Stout (11.6%) has been aged for 10 months in cognac barrels. We started with a whopping imperial stout with cocoa, cinnamon and vanilla, then spiked it with a trio of chilies – sweet ancho, tangy guajillo and smoky chipotle.
The beer pours a thick, viscous black. The vanilla and cinnamon lend notes of horchata, while the cocoa and chili marry to create a decadently sweet and lingering spicy flavour. It’s impossible to tell where the warming alcohol begins and the chili heat ends. Did we mention it’s smooth? Ridiculously so.

Bottle pour at Barrel Fest 2025, pours black, no head. Aroma is dominated by the cognac, with moderate roast and plenty of booze. Flavour is intense, with intense cognac, super spicy chili, and a touch of cinnamon. Big cognac booziness that pokes through the spiciness. I’m liking this.

Bottle pour at Barrel Fest 2025. Pours dark brown with a beige head. Lots of chilis, bourbon, and chocolate on the nose. Flavour has tons of chocolate and chilis, a lot of chili hitting the back of the throat. The cognac comes through stronger as it warms. I think the chilies are a bit much, but it does come together well.

Dark brown. No head. Great aroma - that cinnamon, chocolate, and pepper…takes me back to the last time I was in Calgary lol. But that’s a great beer. Quality all round, the cognac barrel lending a really cool element to the stout and cinnamon in particular.

500 ml bottle. Pours a very dark brown with almost no head. Aromas of chocolate syrup, vanilla, cinnamon, peppers and slick roasted malts. Flavors follow same with chili peppers more obvious and with a bit of a burn. Possibly some cognac but masked by the chocolate and peppers. Still, very tasty and very good.

Poured from 500mL bottle. Near black with small beige head. Mild roast, chilli pepper, chocolate, some cognac and cinnamon in the background. Decent.
