Bloody Butcher corn is a very unique, dry and deep red heirloom corn that was almost all but forgotten. Thanks to folks like Fox Farms and countless others, this beautiful corn is making a big comeback.

Undated bottle drunk 6/27/22. Lightly hazy, drab brass-golden. Small, white head. Moderate-to-low retention. Very tart nose with light acetic next to lots of lactic acid. Finally softening with sweet, nutty, lightly tart sorghum and light corn notes. Hints of vanilla and strong fruit ester with no alcohol or flaw. Big burst of acetic and lactic acidity up front, softening from massively softly textured sorghum and corn with lightly-to-moderately sweet sugars and the tell tale tart cherry of the sorghum. Really interesting beer and it's nice to see all of these different grains. Not sure it need the cane juice though, as it's pushing it on the sweetness. Or maybe just needed stronger attenuation all around. Still, interesting and drinkable with tons of flavor and complexity.

Bottle from Tavour: pours yellow with white head. Aroma is apricot and lemon. Taste is sour, pretty funky, loads of apricot. Fine.

Bottle from Tavour. A gusher. Orange fruit and sweet sugar orange flavor. Slight funk. Grain shows itself on the flavor. Refreshing with nice tartness.

Draft at Fonta Flora in Morganton. Pours a clearish straw gold with a finger of white foam that lingers. Lovely aromas of corn, grain and mineral on the nose. Palate is similar with a touch of sweetness from the corn. More mineral notes, scratchy carbonation and yeast. Very drinkable table beer brewed with local ingredients.

Bottle from Tavour. Pours translucent gold with a transient white head. Aroma of lemon and rye. Med body. Lightly tart. Flavor is lemon, rye, and arguably something lacto/pedio - definitely not Brett. Clean tho, and drinks nicely.

Bottle. Pours pale yellow gold with a small white head that dissipates pretty quickly with some lacing. Aroma is grains, socks, minerals, lemon. Flavor is light tart, light plus funk, mineral. Light bodied and super clean on the palate.

Pale colour, minimal head. Aroma is intensive floral, funky, also vinegar and straw. Heavy sour. Oily texture, soft carbonation. Good.

Bottle. Cloudwater Unit 9. Hazed, pale yellow gold. Fine ring of white head. Nose has wheat and straw. Apricot kernel. Preserved lemon. A little sweaty sock brett. Touch of oily petal. Taste has a nice balance of tart and bittersweet. Light and super clean on the palate. Fine and fresh carbonation. Light sweetness and a pinch of tartness to finish. Nice.

Wine glass showing deep gold with a finger of clean white foam. The nose shows moderately intense tart notes of brett and dried apricot. The palate is well carbonated and light bodied. Lightly tart and light notes of corn.
