In Normandy, France, cider has been made on the farm for over a thousand years. Apples were carried from orchard to barn by cart, drawn by a big, grey horse—a percheron. The apples were milled and pressed into juice through straw—driven by that same horse—then fermented with wild yeast in used wine barrels. The resulting farm cider, or cidre fermier, was rustic and complex, with notes of both the farm and barrel.

Percheron Cidre Fermier is dedicated to the big, beautiful horse of Normandy. Like its French cousin, it bares the unmistakable scent of the farm, a strong body, and a gentle finish.

Tap @CBC16. Clear, pale yellow. No head. Mild green apple aroma. Watery apple flavour, a little bitter kick towards the finish but otherwise bland and boring.

750 ml. bottle from Beer Revolution. 2011 Harvest. It pours a clear yellow color with a lot of fine bubbles, but no head. The aroma has some good, crisp apple notes, some hints of florals and mild smoky phenols. Overall, not too wild but just enough to keep it interesting. The flavor is very dry with lighter than average apple character that leaves me wanting a little bit more. Slightly watery on the palate. Im picking up some very distant hints of wild fermention, minerals and smoky phenols, but overall this is very subdued in character. Not really any tartness other than the apple flavor. Nothing wrong with it, and it actually drinks quite pleasant, but I prefer a more bold cider.

On tap at Bailey's, pours a hazy pale yellow / clear. Nose brings out a great mix of brett and medium sweet apples. Flavour is really well-designed and lovely, with lots of brett and apples - about equal parts brett and apples. Very complex. Excellent.

750 ml bottle...looks like a ginger ale...pungent apple aroma!...slightly sour on the first few sips....like a cider blended with a Flemish sour ale...reminds me of a champagne with all the bubbles that go right to your head!

Bottle. Pours a hazy pale yellow with a fizzy white head that dissipates quickly and immediately. Aroma has a nice little tart apple note with some sweetness and a touch of musty dryness. Flavor has a nice combination of tart apples with a bit of sweetness and a finish of musty earthiness that works with the tartness.

Draught at Capitol Cider, Seattle
Pale yellow color. Delicate aroma, hints of apple, wax, flowers, pear. Quite dry, and weak mouthfeel; light fruity flavor, a bit peachy; short final.
Delicate cider, nice, but could dare more.
