We took imperial stout aged 23 months in Willet bourbon barrels and blended it with a small amount of "new" un-aged beer to balance the liquid. Then, we conditioned the stout on Papua New Guinea and Costa Rican Vanilla Beans, hand-toasted almonds, and a modest amount of Saigon cinnamon chips.
