First, we did it Just Like That. Now, we’re gonna do it Just Like This.
Just Like This is a new 6.7% IPA that revisits the hop combination of Just Like That, one of our favorite IPAs from last year. But whereas That had a distinctly cloudy complexion, This is a clearer West Coast IPA.
We’ve tweaked the recipe a little to make Just Like This suitable to the San Diego style — namely, swapping out any adjuncts for a grist that’s pretty much all pale barleys. Hopping started with a few rounds of Almighty Citra in the kettle. The whirlpool was a Riwaka party.
For us, though, this series is mainly about the dry hop and showcasing Alora there. A newer PNW varietal from @Hopsteiner, Alora is big on yuzu, ripe melon, and peach. And it plays well with others, so we added more Riwaka and more Citra to the mix.
The word alora translates to “dreamlike” in Latin, and that’s sounding about right now at the moment.

Wonderful stuff. Ocelot is just putting out banger after banger. Lots of grapefruit riwaka and pine. Good body, and bitter ass finish. Tap at brewery.
