We used water from our glacial fed aquifer to rehydrate the pomace, and then we pressed the fruit solids again. Residual sugars and tannins are extracted, and the resulting apple juice was split into different fermenters (stainless and oak), blended together and bottle conditioned. The result is a low ABV (3%), medium bodied, incredibly refreshing beverage that’s the perfect companion to bring along on your adventures!
